For Batch 4 we asked Kelvin Cooperage to show what new barrels could do. William Hornaday and his team made medium-toast, #2 char and #4 char barrels, broke them apart and rebuilt them with toasted and charred staves alternating: the first Split Stave™ barrels.

5.5- and 12-year Kentucky straight bourbons rested in them for five months.

Mash bill: 78% corn, 10% rye, 12% malted barley (5.5 years)
74% corn, 18% rye, 8% malted barley (12 years)
Bottles: 2,700
Nose: Dark cocoa, with hints of crème brûlée.
Taste: Oak up front, then custard and cinnamon.
Finish: Long and rich. Oak, dark chocolate, earthy tobacco.
