Back to finishing after two unfinished batches. Three Kentucky straight bourbons went into dark rum barrels from the Florida Keys, two went into oloroso sherry barrels from Andalusia, and we blended the results.

Mash bill: 78% corn, 10% rye, 12% malted barley (6 years)
75% corn, 13% rye, 12% malted barley (9 years)
74% corn, 18% rye, 8% malted barley (12 years)

Nose: Sweet fruit, fortified wine, molasses, vanilla.
Taste: The bourbon and rum lead: rye spice and dark burnt sugar.
Finish: Medium-short and dry, sherry-forward, with pepper at the back.
