Kelvin Cooperage built a set of medium-toast barrels and a set of #2 char barrels, took them apart and rebuilt them with toasted and charred staves alternating. The toast brings marshmallow and crème brûlée; the char brings smoky oak. Inside: the same 7-year straight rye as Batch 7.

Mash bill: 95% rye, 5% malted barley

Nose: Mint, toasted marshmallow, oak, candied citrus.
Taste: Crème brûlée up front, toasted marshmallow around it, then black pepper and warm oak.
Finish: Medium. Spice and marshmallow.
